- Melt butter in a pot. Sauté onion and garlic until soft.
- Add diced potato and vegetable stock. Bring to a boil.
- Simmer for 15 minutes until potato is tender.
- Add spinach and cook for 2 minutes until wilted.
- Blend soup until smooth using an immersion blender.
- Return to heat. Add cream, salt, pepper, and nutmeg.
- Heat gently without boiling.
- Serve hot with crusty bread.
