Crispy Masala Dosa
Golden crispy dosa filled with spiced potato masala. A beloved South Indian breakfast that is both satisfying and delicious.

- For the filling: Heat oil in a pan, add mustard seeds and let them splutter.
- Add curry leaves, green chilies, and sliced onions. Sauté until onions are translucent.
- Add turmeric and mashed potatoes. Mix well and season with salt. Keep warm.
- Heat a cast iron tawa or non-stick pan over medium-high heat.
- Pour a ladleful of batter and spread in circular motion from center outwards.
- Drizzle oil around the edges and on top.
- Cook until the bottom turns golden and crispy, about 2-3 minutes.
- Place potato filling in the center and fold the dosa.
- Serve hot with coconut chutney and sambar.
