  1. For the filling: Heat oil in a pan, add mustard seeds and let them splutter.
  2. Add curry leaves, green chilies, and sliced onions. Sauté until onions are translucent.
  3. Add turmeric and mashed potatoes. Mix well and season with salt. Keep warm.
  4. Heat a cast iron tawa or non-stick pan over medium-high heat.
  5. Pour a ladleful of batter and spread in circular motion from center outwards.
  6. Drizzle oil around the edges and on top.
  7. Cook until the bottom turns golden and crispy, about 2-3 minutes.
  8. Place potato filling in the center and fold the dosa.
  9. Serve hot with coconut chutney and sambar.
