  1. Press tofu for 15 minutes to remove excess water. Cut into cubes.
  2. Toss tofu cubes in cornstarch until evenly coated.
  3. Heat 2 tbsp oil in a wok. Fry tofu until golden and crispy on all sides. Set aside.
  4. Add remaining oil. Stir-fry garlic and ginger for 30 seconds.
  5. Add broccoli, bell peppers, and snap peas. Stir-fry for 3-4 minutes.
  6. Mix soy sauce, rice vinegar, and 2 tbsp water. Add to the wok.
  7. Return crispy tofu to the wok and toss to coat.
  8. Drizzle with sesame oil and garnish with sesame seeds.
  9. Serve hot over steamed rice or noodles.
