Vegetable Fried Rice

- Heat 1 tbsp oil in a wok over high heat. Add beaten eggs and scramble. Set aside.
- Add remaining oil to the wok. Add garlic and stir-fry for 30 seconds.
- Add mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
- Add cold rice, breaking up any clumps. Stir-fry for 3-4 minutes.
- Add soy sauce, salt, and white pepper. Toss well.
- Add scrambled eggs back to the wok and mix.
- Drizzle with sesame oil and add spring onions.
- Give a final toss and serve immediately.
