  1. Rinse poha in water and drain immediately. Let it sit for 5 minutes to soften.
  2. Add salt, sugar, and turmeric to the poha. Mix gently and set aside.
  3. Heat oil in a pan. Add mustard seeds and let them splutter.
  4. Add peanuts and roast until golden brown.
  5. Add curry leaves, green chilies, and onions. Sauté until onions are soft.
  6. Add the prepared poha and mix gently without breaking the flakes.
  7. Cook for 2-3 minutes on low heat.
  8. Add lemon juice and mix well.
  9. Garnish with fresh coriander and serve hot.
