  1. Blanch spinach in boiling water for 2 minutes. Drain and immediately transfer to ice water.
  2. Blend spinach with ginger, garlic, and green chilies into a smooth paste.
  3. Heat oil in a pan. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until golden brown.
  5. Add chopped tomatoes and cook until soft and oil separates.
  6. Pour in the spinach paste and cook for 5-7 minutes on medium heat.
  7. Add salt and garam masala. Mix well.
  8. Add paneer cubes gently. Simmer for 3-4 minutes.
  9. Finish with cream if using. Serve hot with roti or naan.
