- Pat chickpeas completely dry with paper towels. This is key for crispiness.
- Toss chickpeas with olive oil and spread on a baking sheet in single layer.
- Roast for 30-40 minutes, shaking pan every 10 minutes, until golden and crunchy.
- Mix all the spices together in a bowl.
- Toss hot chickpeas with spice mixture immediately after removing from oven.
- Let cool for 5 minutes. They will crisp up more as they cool.
- Store in an airtight container for up to 5 days.
