  1. Pressure cook toor dal with turmeric until soft. Mash and set aside.
  2. Cook vegetables in water until tender. Add tomatoes and onion.
  3. Add tamarind paste, sambar powder, and salt. Simmer for 10 minutes.
  4. Add mashed dal and adjust consistency with water.
  5. For tempering: Heat oil, add mustard seeds, curry leaves, and asafoetida.
  6. Pour tempering into the sambar.
  7. Simmer for 5 more minutes.
  8. Garnish with coriander and serve with rice, idli, or dosa.
