Vegetable Upma

Savory semolina porridge loaded with vegetables and tempered with mustard and curry leaves. A wholesome South Indian breakfast.

  1. Dry roast semolina in a pan until fragrant. Set aside.
  2. Heat ghee in a pan. Add mustard seeds and let them splutter.
  3. Add urad dal, chana dal, and cashews. Roast until golden.
  4. Add curry leaves, green chilies, ginger, and onion. Sauté until onions are soft.
  5. Add mixed vegetables and cook for 2-3 minutes.
  6. Add water and salt. Bring to a boil.
  7. Reduce heat and slowly add roasted semolina while stirring continuously.
  8. Cook for 3-4 minutes until water is absorbed and upma thickens.
  9. Cover and let it rest for 2 minutes. Serve hot with chutney.
