Vegetable Upma
Savory semolina porridge loaded with vegetables and tempered with mustard and curry leaves. A wholesome South Indian breakfast.

- Dry roast semolina in a pan until fragrant. Set aside.
- Heat ghee in a pan. Add mustard seeds and let them splutter.
- Add urad dal, chana dal, and cashews. Roast until golden.
- Add curry leaves, green chilies, ginger, and onion. Sauté until onions are soft.
- Add mixed vegetables and cook for 2-3 minutes.
- Add water and salt. Bring to a boil.
- Reduce heat and slowly add roasted semolina while stirring continuously.
- Cook for 3-4 minutes until water is absorbed and upma thickens.
- Cover and let it rest for 2 minutes. Serve hot with chutney.
